1. Preheat the oven to 220°C (425°F) and line two large baking sheets with parchment paper.
2. Peel the carrots and cut them into sticks about 7 cm (3 inches) long. Cut the chicken breast into bite-size 2.5 cm (1 inch) pieces and pat dry.
3. Set up three shallow bowls: flour mixed with half of the salt in the first, beaten eggs in the second, and Parmesan, panko, garlic powder, smoked paprika, oregano, remaining salt and black pepper stirred together in the third.

4. Dredge each chicken piece in flour, dip in egg, then press firmly into the Parmesan mixture to coat all sides. Arrange in a single layer on one baking sheet with space between pieces.
5. Drizzle the chicken lightly with half of the olive oil to help the crust brown and crisp.

6. Toss the carrot sticks with the remaining olive oil and honey, then spread on the second baking sheet.

7. Bake the chicken and carrots for 15 to 18 minutes, flipping the chicken and stirring the carrots halfway, until the chicken is golden and reaches 74°C (165°F) inside and the carrots are tender with lightly browned edges.

8. Rest the chicken bites for 3 minutes, then serve warm alongside the carrot sticks.
