  1. Build the Base
    1. Heat Coconut oil in a large pot over medium heat. Add Cumin seeds and let them sizzle for 15 to 20 seconds until fragrant.

  2. 2. Add Onion and cook, stirring often, for 12 to 15 minutes until deeply golden and softened.

  3. 3. Stir in Garlic and Ginger and cook for 1 minute. Add Ground coriander, Ground cumin, Turmeric, Red chili flakes, and Tomato paste, and cook for 30 to 60 seconds until the spices smell toasted.
    3 clove Garlic, 1 tbsp Ginger, 2 tsp Ground coriander, 1 tsp Ground cumin, 0.5 tsp Turmeric, 0.2 tsp Red chili flakes, 1 tbsp Tomato paste
  4. Simmer the Curry
    4. Add Sweet potato, Red lentils, Coconut milk, Vegetable broth, Salt, and Black pepper. Bring to a gentle simmer.
    2 piece Sweet potato, 1 cup Red lentils, 1 can Coconut milk, 2.5 cup Vegetable broth, 1.2 tsp Salt, 0.2 tsp Black pepper
  5. 5. Cover partially and simmer over low heat for 22 to 28 minutes, stirring occasionally, until the Sweet potato is tender and the Red lentils have broken down into a creamy curry. If it becomes too thick, add a splash of water and simmer briefly.
  6. Finish and Serve
    6. Turn off the heat and stir in Lime juice and Cilantro. Taste and adjust with more Salt if needed.
