    1. Combine the milk and white wine vinegar in a jug or bowl, stir briefly, and set aside for 5 minutes. This mimics buttermilk and will curdle slightly — that's exactly what you want for tender, fluffy pancakes.

  2. 2. Melt the butter gently in a small saucepan or microwave, then allow it to cool for 2 minutes so it doesn't scramble the eggs.

  3. 3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.

  4. 4. Whisk the eggs, vanilla extract, and cooled melted butter into the curdled milk mixture. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined — lumps are fine and expected. Do not overmix or the pancakes will be tough. Rest the batter for 5 minutes while you heat the pan.

Keep finished pancakes warm in an oven at 90°C / 195°F while you cook the rest.
