  1. Chimichurri
    1. Finely chop the parsley, cilantro, oregano and garlic. Stir together in a bowl with the red wine vinegar, red chili flakes, a pinch of kosher salt and the extra-virgin olive oil (reserve 5 tablespoons of the oil for the mash and broccoli). Let sit at least 20 minutes so the flavors meld.
    2 tsp Kosher salt, 1 cup Fresh flat-leaf parsley, 0.5 cup Fresh cilantro, 1 tbsp Fresh oregano leaves, 4 clove Garlic, 3 tbsp Red wine vinegar, 0.5 tsp Red chili flakes, 0.8 cup Extra-virgin olive oil
  2. 2. Take the steak out of the fridge, pat it dry, and season both sides with kosher salt and black pepper. Let it rest at room temperature while the potatoes cook.
    1.5 lb Ribeye or sirloin steak, 2 tsp Kosher salt, 1 tsp Black pepper
  3. Olive Oil Mash
    3. Peel and cut the Yukon Gold potatoes into 2 inch (5 cm) chunks. Place in a pot, cover with cold salted water, bring to a boil, then simmer 15 to 20 minutes until very tender. Drain well and return to the warm pot for 1 minute to steam off moisture.

  4. 4. Warm the whole milk gently. Mash the potatoes, then stir in 3 tablespoons of olive oil and the warm milk until fluffy and creamy. Season with salt and pepper, cover, and keep warm.

  5. Broccoli and Steak
    5. Heat the oven to 230°C (450°F) with a sheet pan inside. Cut the broccoli into large florets, toss with 2 tablespoons of olive oil and a pinch of salt, and spread on the hot pan. Roast 15 to 18 minutes, turning once, until charred at the edges and tender.

  6. 6. Heat a heavy skillet over high heat until smoking. Sear the steak 3 to 4 minutes per side for medium-rare (54°C/130°F internal), or longer to your liking. Rest the steak 8 minutes on a board, then slice against the grain.

    7. Squeeze lemon juice over the charred broccoli. Spoon the mash onto plates, top with the sliced steak and broccoli, and spoon the chimichurri generously over the steak.
