    1. Make the honey syrup by combining equal parts honey and warm water in a small glass and stirring until fully dissolved. Set aside to cool for a minute.
    0.8 oz Honey syrup (1:1 honey and warm water)
  2. 2. Rim a tall highball glass by running a grapefruit slice around the edge, then pressing the rim into smoked sea salt so it coats half the rim. Fill the glass with ice.
    1 pinch Smoked sea salt, 1 cup Ice cubes, 1 slice Grapefruit slice (garnish)
  3. Build the Cocktail
    3. Add the mezcal, fresh grapefruit juice, fresh lime juice, and honey syrup directly into the ice-filled glass and give it one gentle stir to combine.
    2 oz Mezcal, 1.5 oz Fresh grapefruit juice, 0.5 oz Fresh lime juice, 0.8 oz Honey syrup (1:1 honey and warm water)
  4. 4. Top with sparkling water or grapefruit soda, stir once very gently to preserve the carbonation, and garnish with a fresh grapefruit slice on the rim. Serve immediately.
