Cook Pasta
1. Bring a large pot of water to a boil and add the kosher salt so it tastes like mild seawater. Cook the penne for 1 to 2 minutes less than the package directions until just al dente. Scoop out 1 cup of starchy pasta water, then drain without rinsing.

Make Sauce
2. While the pasta cooks, warm the olive oil in a large deep skillet over medium heat. Add the garlic and red pepper flakes and cook for 30 to 60 seconds until fragrant but not browned.

3. Add the spinach in handfuls, tossing until each batch wilts, about 2 minutes total.

4. Reduce the heat to low. Add the cream cheese and one-third cup of the reserved pasta water, stirring until melted into a smooth, glossy sauce, about 1 minute.

Toss and Serve
5. Add the drained pasta to the skillet with the Parmigiano-Reggiano, black pepper and nutmeg. Toss over low heat for 1 to 2 minutes, adding more pasta water a splash at a time, until the sauce clings to every piece and is lightly coating rather than pooling.

6. Remove from the heat, stir in the lemon juice to brighten the richness, taste and adjust the seasoning, and serve immediately.
