  1. Simple Syrup
    1. Combine the sugar and water in a small saucepan over medium heat. Stir until the sugar fully dissolves, about 2–3 minutes. Remove from heat and allow to cool completely. This can be made ahead and refrigerated.
0.5 cup White granulated sugar, 0.5 cup Water
  2. Muddle & Mix
    2. Divide the fresh strawberries and mint leaves evenly between 4 sturdy glasses (or muddle in batches in a cocktail shaker). Use a muddler or the back of a spoon to firmly press and twist until the strawberries are fully broken down and the mint is fragrant — about 10–12 good presses.
12 piece Fresh strawberries, 16 piece Fresh mint leaves
  3. 3. Add the gin, fresh lemon juice, and simple syrup to a cocktail shaker filled with ice. Shake vigorously for 15–20 seconds until very cold.
6 oz Gin, 3 oz Fresh lemon juice, 2 oz Simple syrup, 1 cup Ice
  4. 4. Strain or pour the gin mixture directly over the muddled strawberries in each glass. Fill each glass with a generous handful of ice, then top with a splash of sparkling water and give a gentle stir to combine.
3 cup Ice, 4 oz Sparkling water
  5. To Serve
    5. Garnish each glass with a halved fresh strawberry on the rim and a lemon slice. Serve immediately while ice cold.
4 piece Fresh strawberries (garnish), 4 piece Lemon slices (garnish)
