Simple Syrup
1. Combine the sugar and water in a small saucepan over medium heat. Stir until the sugar fully dissolves, about 2–3 minutes. Remove from heat and allow to cool completely. This can be made ahead and refrigerated.

Muddle & Mix
2. Divide the fresh strawberries and mint leaves evenly between 4 sturdy glasses (or muddle in batches in a cocktail shaker). Use a muddler or the back of a spoon to firmly press and twist until the strawberries are fully broken down and the mint is fragrant — about 10–12 good presses.

3. Add the gin, fresh lemon juice, and simple syrup to a cocktail shaker filled with ice. Shake vigorously for 15–20 seconds until very cold.

4. Strain or pour the gin mixture directly over the muddled strawberries in each glass. Fill each glass with a generous handful of ice, then top with a splash of sparkling water and give a gentle stir to combine.
