Assemble
1. Spread pesto over 4 slices of bread and pizza sauce over the other 4 slices. Layer mozzarella slices on the pesto slices, top with pepperoni, then close each sandwich with a pizza sauce slice, sauce side down.

2. Spread softened butter generously over the outside top and bottom of each sandwich so the bread crisps and browns evenly.

4. Rest the sandwiches for 1 minute, then slice in half and serve hot while the cheese is molten.
