1. Place racks in the upper and lower thirds of the oven and preheat to 425°F (220°C). Pat the chicken thighs very dry with paper towels so the skin crisps.
8 piece Bone-in, skin-on chicken thighs
-
2. Mix the smoked paprika, garlic powder, onion powder, dried thyme, kosher salt and black pepper in a small bowl to make a spice blend.
2 tsp Smoked paprika,
2 tsp Garlic powder,
1 tsp Onion powder,
1 tsp Dried thyme,
2 tsp Kosher salt,
1 tsp Black pepper
-
3. Toss the potatoes, carrots, onion and garlic cloves on a large rimmed sheet pan with half of the olive oil and about one third of the spice blend. Spread into an even layer, pushing the vegetables toward the edges to leave room in the center, or use a second pan if crowded.

4 piece Carrots, cut into 1-inch chunks,
2 piece Yellow onion, cut into wedges,
1.5 tbsp Olive oil,

0.3 tsp Onion powder,
0.3 tsp Dried thyme,
0.7 tsp Kosher salt,
0.3 tsp Black pepper,
4 clove Garlic cloves, smashed

4. Rub the chicken thighs with the remaining olive oil and the remaining spice blend, then arrange them skin-side up on top of and among the vegetables.

1.5 tbsp Olive oil,
1.3 tsp Smoked paprika,
1.3 tsp Garlic powder,
0.7 tsp Onion powder,

5. Roast for 40 to 45 minutes, until the chicken skin is deep golden and crisp, the chicken reaches 175°F (80°C) in the thickest part, and the potatoes are tender. Rotate the pan halfway through if the oven cooks unevenly.
-
6. Rest the pan for 5 to 10 minutes. Squeeze the lemon wedges over everything and scatter with parsley.
1 piece Lemon, cut into wedges,
2 tbsp Fresh parsley (garnish)
-
7. Serve 4 hearty portions, each with 1 thigh and a generous share of vegetables. Remove the remaining 4 thighs from the bone, shred or slice the meat, and refrigerate in an airtight container for up to 4 days for tacos, fried rice, sandwiches or soup.
