Make the Dough
1. Add warm water to the bowl of a stand mixer fitted with a dough hook. Sprinkle in the sugar and yeast and let it stand for 5–10 minutes until foamy.
0.5 cup warm water,
1 tbsp white sugar,
1 tsp active dry yeast
2. Mix in the butter, milk, and salt, then gradually stir in the flour. Knead for 7–10 minutes until the dough sticks to the bottom of the bowl but clears the sides. Add 1–2 tablespoons of extra water if the dough is too dense. Divide the dough into 2 equal portions.
0.5 cup warm water,
1 tbsp unsalted butter, softened,
0.5 cup milk,
1 tsp salt,
2.5 cup bread flour
Assemble
3. In a small bowl, combine the melted butter, a pinch of salt, finely chopped parsley, minced garlic, and grated Parmesan cheese (if using).
4. Cut each dough portion into small round pieces and dip each piece into the garlic butter mixture, coating well. Arrange the coated dough balls in two mini loaf pans or one regular loaf pan. Reserve any leftover butter mixture.
5. Cover the pan(s) with a clean kitchen towel and let the dough rise for about 1 hour, or until doubled in size.
Bake
6. Bake at 350°F (176°C) for 30 minutes, or until the tops are golden brown.
7. As soon as the bread comes out of the oven, brush the tops with the reserved garlic butter mixture. Serve warm and pull apart to eat.
