Make the Dough
1. Stir the warm milk, active dry yeast and granulated sugar together in a large bowl. Let it sit for 5-10 minutes until foamy.

2. Whisk the egg and melted butter into the yeast mixture. Add the bread flour and fine salt, then stir until a shaggy dough forms.

3. Knead by hand on a lightly floured surface or with a dough hook for 8-10 minutes, until smooth, soft and slightly tacky, and it passes the windowpane test.
4. Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours, until doubled in size.
Shape and Bake
5. Turn the dough out and roll it into a roughly 9x12-inch (23x30 cm) rectangle about 3/4 inch (2 cm) thick. Cut into 12 squares with a knife or pizza cutter, and arrange them with a little space between on a parchment-lined baking sheet.
6. Cover loosely and let the rolls proof for 30-40 minutes, until puffy. Meanwhile, preheat the oven to 350°F (175°C).
7. Bake for 15-18 minutes, until the tops are golden brown. Brush immediately with the melted butter for brushing and sprinkle with a pinch of flaky salt if desired.
8. While the rolls bake, whip the softened butter with a mixer for 3-4 minutes until pale and fluffy. Add the powdered sugar, honey and ground cinnamon and whip for another 2 minutes until light and airy.
