Prep
1. Drain the hearts-of-palm noodles and rinse well under cold running water for 1 minute to remove the canning brine. Soak in a bowl of fresh water while you prepare the rest, then drain again and pat dry. Slice the chicken breast into thin strips or bite-size pieces and pat the shrimp dry.

2. Toss the chicken with half of the Cajun seasoning, the garlic powder, and the salt. Toss the shrimp with the remaining Cajun seasoning.
3. Heat the olive oil in a large deep skillet over medium-high heat until shimmering. Cook the chicken in a single layer for 5-6 minutes, turning once, until browned and cooked through to 74°C (165°F). Transfer to a plate.

4. In the same skillet, sear the shrimp for 1.5-2 minutes per side until pink and just opaque. Transfer to the plate with the chicken, leaving the browned bits in the pan.
Alfredo Sauce
5. Reduce the heat to medium-low and pour in the heavy cream, scraping up the browned bits. Simmer gently for 4-5 minutes until slightly thickened and able to coat the back of a spoon.

6. Remove the pan from the heat. Stir in the Parmesan cheese a handful at a time until melted and smooth, then add the hot sauce and black pepper.

Finish and Serve
7. Return the pan to low heat, add the drained hearts-of-palm noodles, and simmer for 3-4 minutes until warmed through and coated, as they will not absorb the sauce like pasta. Fold in the chicken and shrimp and heat for 1 minute. Taste and adjust seasoning, then serve immediately.
