1. Whisk the eggs with the milk, salt, and black pepper until just combined. Mince the garlic, and crumble the feta into small pieces.

2. Toast the sourdough bread until golden and crisp.

3. Melt half of the unsalted butter in a nonstick skillet over medium heat. Add the garlic and red pepper flakes and cook for 30 seconds until fragrant, then add the fresh baby spinach and cook for 1 minute until just wilted. Stir in the lemon juice and transfer the spinach to a plate.
4. Return the skillet to low heat and melt the remaining unsalted butter. Pour in the eggs and stir gently with a spatula for 2 to 3 minutes, pulling the curds across the pan, until softly set and still creamy.

5. Remove the pan from the heat, fold in the spinach and half of the feta cheese, and let the residual heat finish the eggs.

6. Pile the eggs onto the toast, top with the remaining feta cheese and the fresh dill or parsley, and serve immediately.
