    3. Heat the olive oil and butter in a large skillet over medium-high heat. When hot, add the seasoned chicken in a single layer and sear until golden on both sides and almost cooked through, about 4 to 5 minutes per side. Transfer the chicken to a plate and tent loosely with foil.

    4. Reduce the heat to medium. In the same skillet, add the onion and cook, stirring often, until softened and lightly golden, about 4 to 5 minutes. Add the garlic and cook until fragrant, about 30 seconds.

  6. 6. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Simmer for 2 to 3 minutes to slightly reduce.

  7. 7. Lower the heat to medium-low and stir in the heavy cream. Bring just to a gentle simmer, then gradually add the Parmesan cheese, stirring constantly until melted and the sauce is smooth.

    8. Add the chopped spinach to the skillet and stir until just wilted, about 1 to 2 minutes. Taste the sauce and adjust seasoning with a pinch of additional salt or pepper if needed.
