  1. Vanilla Simple Syrup
    1. Combine sugar and water in a small saucepan over medium heat. Stir until sugar fully dissolves, about 2–3 minutes. Remove from heat, stir in vanilla extract, and let cool completely. (This makes more than needed — store the rest refrigerated for up to 2 weeks.)
    0.2 cup Granulated sugar, 0.2 cup Water, 0.5 tsp Vanilla extract
  2. Build the Cocktail
    2. Fill a Collins glass with ice. Squeeze fresh lime juice directly and add the gin and vanilla simple syrup.
    2 oz Gin, 1 oz Fresh lime juice, 0.8 oz Vanilla simple syrup
  3. 3. Give the mix a brief stir (5–6 seconds) to combine the spirit, citrus, and syrup before adding the soda.
  4. 4. Top with soda water, pouring gently down the side of the glass to preserve the bubbles. Give one final gentle stir.

    5. Garnish with a lime wheel on the rim and serve immediately while ice-cold and effervescent.
