Marinate Chicken
1. Zest both lemons into a bowl, then juice one lemon and slice the other into thin rounds for roasting. Mince the garlic and chop the parsley. Whisk the lemon zest, lemon juice, garlic, olive oil, thyme leaves, oregano, smoked paprika, kosher salt and black pepper together.
2. Place the chicken breasts between parchment and pound to an even thickness of about 2 cm (3/4 inch). Coat the chicken in about two-thirds of the lemon-herb mixture and marinate for 20 minutes at room temperature, or up to 4 hours in the refrigerator.

Roast and Cook
3. Preheat the oven to 220°C (425°F) with a large rimmed baking sheet inside. Cut the broccoli into medium florets and toss with the remaining olive oil, red pepper flakes, and the remaining kosher salt and black pepper.

4. Carefully spread the broccoli on the hot baking sheet in a single layer and roast for 10 minutes. Meanwhile, heat a large oven-safe skillet over medium-high heat and melt the butter. Sear the chicken for 4 minutes per side until deeply golden.

5. Tuck the lemon slices around the chicken in the skillet and transfer to the oven alongside the broccoli. Roast for 8 to 10 minutes, until the chicken reaches 74°C (165°F) internally and the broccoli is crisp-tender with charred edges.
Rest and Serve
6. Rest the chicken for 5 minutes, then slice against the grain. Serve over the roasted broccoli, drizzled with the pan juices and any remaining lemon-herb mixture, and finish with a squeeze of roasted lemon.
