  1. Marinate Steak
    1. Pat the steak dry. Mix the harissa paste, 1 tbsp olive oil, cumin, coriander, half the salt and the black pepper, then rub all over the steak. Let it sit at room temperature for 20 minutes.
    2 piece Sirloin or ribeye steak, 2 tbsp Harissa paste, 1.0 tbsp Olive oil, 1 tsp Ground cumin, 0.5 tsp Ground coriander, 0.5 tsp Salt, 0.5 tsp Black pepper
  2. 2. Meanwhile, whisk the tahini with the juice of 1 lemon, 1 grated garlic clove and a pinch of the remaining salt. It will seize up, then loosen as you gradually whisk in the cold water until smooth and pourable.

  3. Char Greens
    3. Cut the broccoli into medium florets and trim the woody ends from the asparagus. Toss both with 1 tbsp olive oil and the remaining salt. Heat a large cast-iron skillet over high heat until smoking, then char the broccoli for 5 minutes, turning occasionally, until blackened in spots. Add the asparagus and cook 3 to 4 minutes more until tender-crisp. Add the remaining garlic clove, sliced, for the last 30 seconds. Transfer to a plate.

  4. Cook Steak
    4. Wipe out the skillet, add the remaining olive oil and heat over high heat until shimmering. Sear the steaks 3 to 4 minutes per side for medium-rare (internal 54C / 130F), or longer to taste. Rest on a board for 8 minutes, then slice against the grain.

  5. Finish and Serve
    5. Squeeze the juice of the remaining half lemon over the greens. Arrange the greens and sliced steak on plates, drizzle generously with the lemon-tahini sauce and scatter with chopped parsley.
