Steak with Cottage Cheese Mash and Roasted Broccoli

  1. Prep
    1. Take the steaks out of the fridge 30 minutes before cooking and pat them dry. Preheat the oven to 220°C (425°F). Cut the broccoli into florets and peel and cube the potatoes.
  2. Mash
    2. Place the potatoes in a pot of cold water with a generous pinch of Kosher salt. Bring to a boil and simmer 15 minutes until very tender, then drain and let steam dry for 2 minutes.

  3. 3. While the potatoes boil, toss the broccoli with Olive oil, a pinch of Kosher salt and Black pepper on a baking sheet. Roast for 15 to 18 minutes until the edges are charred and crisp.

  4. 4. Blend the Cottage cheese in a blender or food processor until smooth and creamy. Mash the drained potatoes with half the Unsalted butter, then stir in the blended Cottage cheese. Season with Kosher salt and Black pepper and keep warm.

  5. Steak
    5. Season the steaks generously with Kosher salt and Black pepper. Heat a cast-iron skillet over high heat until smoking, add Olive oil, and sear the steaks 3 to 4 minutes per side for medium-rare (internal 54°C / 130°F).

  6. 6. Lower the heat to medium, add the remaining Unsalted butter, crushed Garlic and Fresh thyme, and baste the steaks with the foaming butter for 1 minute. Rest the steaks on a board for 8 minutes.

  7. Serve
    7. Squeeze Lemon over the roasted broccoli. Slice the steaks against the grain and serve over the Cottage cheese mash with the broccoli, spooning pan juices over the top and scattering with Chives.
