  1. Pickled Onions
    1. Thinly slice the red onion and place in a bowl. Stir the white vinegar, sugar, 0.5 teaspoon of the salt and the juice of 1 lime together with 0.5 cup warm water until dissolved, then pour over the onion. Let pickle at least 20 minutes while you make the salsa.

  2. Salsa Verde
    2. Halve the white onion and set one half aside for chopping later. Heat a dry cast-iron skillet or comal over medium-high heat. Char the tomatillos, serrano chile, garlic and the onion half (roughly 8 minutes) until blackened in spots and the tomatillos are soft, turning occasionally.

  3. 3. Blend the charred vegetables with the cilantro, the juice of the remaining lime and 0.5 teaspoon of the salt until mostly smooth. Taste and adjust the salt and lime.

  4. Pork and Eggs
    4. Finely chop the reserved onion half. Warm the pulled pork in a skillet over medium heat with the cumin, Mexican oregano and a few spoonfuls of the salsa verde, stirring for 5 minutes until hot and lightly crisped at the edges. Transfer to a bowl and cover to keep warm.
    3 cup Cooked pulled pork (leftover), 0.5 piece White onion, 0.5 tsp Ground cumin, 0.5 tsp Mexican oregano
  5. 5. Whisk the eggs with the remaining 0.5 teaspoon salt. Melt the butter in the same skillet over medium-low heat, add the eggs and stir gently with a spatula for 2 to 3 minutes until softly set and creamy.

  6. Assemble and Serve
    6. Char the corn tortillas directly over a gas flame or in a hot dry skillet for 20 to 30 seconds per side until pliable and lightly blistered, doubling them up if desired. Keep wrapped in a clean towel.

  7. 7. Fill each tortilla with scrambled eggs and warm pulled pork. Top with drained pickled onions, the chopped white onion, a spoonful of salsa verde and crumbled cotija cheese. Serve immediately with extra salsa on the side.
