1. Line 2 baking sheets with parchment paper and set aside. Preheat the oven to 400°F. Lightly dust a work surface with flour.

3. In a mixing bowl, combine the cream cheese, grated Gruyere cheese, Parmesan cheese, chopped herbs, minced garlic, lemon zest, Dijon mustard, salt, black pepper, and olive oil. Mix until smooth and well combined, then taste and adjust seasoning if needed.

4. Unfold one puff pastry sheet onto the floured surface and gently roll it out into a rectangle about 0.25 inch thick, keeping the edges relatively straight.

5. Spread half of the cheese and herb mixture evenly over the puff pastry, leaving a small border along one long edge. Roll the pastry up tightly from the opposite long edge to form a log, then place it seam side down. Repeat with the second puff pastry sheet and remaining filling.

6. Using a sharp knife, slice each filled pastry log into thick spirals and arrange them cut side up on the prepared baking sheets, leaving space between each piece.

7. In a small bowl, whisk the eggs with the milk until smooth to make an egg wash.

8. Brush the tops and exposed pastry edges of each spiral generously with the egg wash. If using sesame seeds, sprinkle them over the tops.

9. Bake the danishes in the preheated oven until the pastry is puffed and deep golden and the filling is set, about 18 to 22 minutes, rotating the baking sheets halfway through for even browning.

10. Let the danishes cool on the baking sheets for a few minutes, then transfer to a rack. Sprinkle with chopped fresh chives for garnish and serve warm or at room temperature.
