Do not overmix, as this develops gluten and will make the pancakes tough. Let the batter rest for 5 minutes; this allows the baking soda to activate with the buttermilk's acidity for extra fluffiness.
  4. Cook the Pancakes
    4. Heat a non-stick skillet or griddle over medium heat. Add a small knob of the cooking butter and swirl to coat. The pan is ready when the butter foams and begins to subside — not smoking.
