  1. Brown the Butter
    1. Melt the unsalted butter in a light-colored skillet over medium heat, swirling often. Cook 5 to 7 minutes until it foams, smells nutty, and brown flecks form at the bottom. Pour into a large heatproof bowl, scraping in all the brown bits, and cool for 15 minutes.

  2. Make the Dough
    2. Whisk the all-purpose flour, baking soda and fine salt together in a medium bowl and set aside.

  3. 3. Whisk the dark brown sugar and granulated sugar into the cooled brown butter until smooth. Whisk in the egg, egg yolk and vanilla extract until glossy and thick.

  4. 4. Fold the dry mixture into the wet mixture just until a few flour streaks remain, then fold in the chopped chocolate. Cover and chill the dough for at least 30 minutes, or up to 48 hours for deeper flavor.

  5. Bake
    5. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment. Scoop the dough into 18 balls of about 2 tablespoons each, spacing them 3 inches apart.
  6. 6. Bake one sheet at a time for 10 to 12 minutes, until the edges are deep golden and crisp while the centers look slightly underdone. Sprinkle with flaky sea salt immediately.

    7. Let the cookies rest on the baking sheet for 5 minutes to finish setting, then transfer to a rack. Serve warm for the gooiest centers.
