Prep
1. Heat the oven to 220°C (425°F) and line two rimmed baking sheets with parchment. Take the pork chops out of the fridge and pat them very dry. Cut the broccoli into medium florets and mince the garlic. Zest the lemon, then cut it in half.
2. Mix the almond flour, Parmesan cheese, dried thyme, dried rosemary, garlic powder, fresh parsley, half the salt and half the black pepper in a shallow dish.
3. Season the pork chops with the remaining salt and pepper. Brush both sides with Dijon mustard, then press each chop firmly into the herb mixture to coat evenly. Place on one baking sheet.
5. Roast the pork chops and broccoli together for 18 to 22 minutes, flipping the broccoli halfway, until the crust is golden, the broccoli edges are charred, and the pork reaches 63°C (145°F) in the thickest part. Swap the pan positions at the midpoint for even browning.
Serve
6. Rest the pork chops for 5 minutes. Squeeze the lemon juice over the broccoli and toss. Serve the chops alongside the broccoli.
