Brown the Beef
1. Heat the olive oil in a large 12-inch skillet with a lid over medium-high heat. Add the ground beef, breaking it up with a spatula, and cook 6 to 8 minutes until deeply browned with no pink remaining.
1.5 lb Ground beef (80/20),
1 tbsp Olive oil
2. Add the onion and cook 3 minutes until softened. Stir in the garlic, chili powder, cumin, smoked paprika, salt and black pepper and cook 1 minute until fragrant. Spoon off excess fat if the pan looks greasy.
3. Stir in the canned tomatoes with green chiles and the Worcestershire sauce, scraping up browned bits from the bottom of the pan. Add the cauliflower rice, stir to combine, cover and cook 5 to 6 minutes over medium heat until the cauliflower is tender but not mushy.
4 cup Cauliflower rice,
1 can Canned diced tomatoes with green chiles,
1 tbsp Worcestershire sauce
Finish and Serve
4. Uncover and cook 1 to 2 minutes to evaporate excess liquid. Sprinkle the cheddar evenly over the top, cover and cook 2 minutes off the heat until melted and bubbly.
2 cup Sharp cheddar cheese, freshly grated
5. Top with the green onions and serve straight from the skillet.
2 piece Green onions, sliced (garnish)
