Make the Batter
1. Blend the rolled oats in a blender for about 20 seconds until coarsely ground into a rough flour, then transfer to a large bowl.

3. In a separate bowl, mash the ripe bananas until mostly smooth, then whisk in the milk, eggs, melted unsalted butter and vanilla extract.

4. Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are fine. Rest the batter for 5 minutes so the oats hydrate and thicken.
Cook the Pancakes
5. Heat a large nonstick skillet or griddle over medium heat and lightly coat with butter. Pour in about 1/4 cup of batter per pancake, working in batches.

6. Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set, then flip and cook 1 to 2 minutes more until golden and cooked through. Keep warm in a 90°C / 200°F oven while cooking the remaining batter, adding butter to the pan as needed.

To Serve
7. Stack the pancakes on plates and top with strawberries and blueberries. Drizzle with maple syrup and serve immediately.
