    1. Preheat the broiler to high and place an oven rack about 6 inches from the heat source. Roughly chop the bacon, finely dice the onion, dice the red bell pepper, and mince the garlic. Roughly chop the fresh parsley and crumble the feta cheese.

  2. Base & Bacon
    2. Set a large oven-safe skillet over medium heat. Add the bacon and cook, stirring occasionally, until the fat renders and the bacon is browned but not crisp. If there is more than a thin coating of fat in the pan, spoon off a little, then add the olive oil.

  3. 3. Add the onion and red bell pepper to the skillet and cook, stirring often, until softened and lightly golden. Stir in the garlic, smoked paprika, ground cumin, and red pepper flakes and cook until fragrant.

  4. Tomato Sauce
    4. Pour in the crushed tomatoes, then season with salt and black pepper. Stir well, bring to a simmer, and cook until slightly thickened and saucy. Taste and adjust seasoning as needed.

  5. Eggs & Broil
    5. Use the back of a spoon to make small wells in the sauce, then crack an egg into each well. Sprinkle the eggs and sauce with a pinch of additional salt and black pepper. Cook on medium-low heat just until the whites begin to set around the edges.

  6. 6. Scatter the crumbled feta cheese evenly over the skillet. Transfer the skillet to the oven and broil until the egg whites are set but the yolks are still soft and the top is bubbling and lightly blistered. Watch closely to avoid overcooking the eggs.

    7. Remove the skillet from the oven and let it sit for a minute. Sprinkle generously with the chopped fresh parsley. Serve straight from the pan with slices of crusty bread for dipping.
