1. Grate the cucumber on the coarse side of a box grater. Gather the grated cucumber in a clean kitchen towel and wring it out firmly over the sink until almost completely dry — this is essential for thick, creamy tzatziki.

2. In a bowl, combine the Greek yogurt, squeezed cucumber, minced garlic (1 clove), olive oil (1 tbsp), a squeeze of lemon juice, and most of the fresh dill (reserving a little for garnish). Season generously with salt and pepper. Stir well, then refrigerate until ready to serve.

3. Preheat the oven to 220°C (425°F). Halve the cherry tomatoes, thinly slice the red onion and green bell pepper, and pit and halve the Kalamata olives if whole. Crumble or slice the feta into chunks.

4. Place the pitas on two large baking sheets. In a small bowl, mix the remaining olive oil with the remaining minced garlic clove and a pinch of dried oregano. Brush this mixture generously over each pita, all the way to the edges.

5. Scatter the cherry tomatoes, red onion, green bell pepper, and Kalamata olives evenly over each pita. Distribute the feta chunks on top. Season lightly with black pepper.

6. Bake for 10–13 minutes until the pita edges are deeply golden and crisp and the feta is lightly browned in spots. Rotate the trays halfway through for even crisping.

7. Remove the pitas from the oven and immediately squeeze a little fresh lemon juice over each one. Dollop generous spoonfuls of tzatziki across the tops and scatter with fresh mint and the reserved dill. Serve immediately.
