1. Zest two lemons into a large bowl, then squeeze in their juice. Add 3 tbsp of the olive oil, 4 minced garlic cloves, oregano, smoked paprika, half the salt and half the black pepper. Add the chicken breasts, turn to coat, and marinate for at least 15 minutes (up to 8 hours refrigerated).

2. Preheat the oven to 220°C (425°F). Line two large baking sheets with parchment.

3. Cut the broccoli into florets, and chop the red bell peppers, zucchini and red onion into 2.5 cm (1 inch) pieces. Toss with the remaining olive oil and remaining salt and pepper, then spread on one baking sheet in a single layer.

4. Place the marinated chicken on the second baking sheet. Roast the chicken and vegetables together for 22–25 minutes, tossing the vegetables halfway, until the chicken reaches 74°C (165°F) inside and the vegetables are browned at the edges. Rest the chicken 5 minutes, then slice or cube.

5. While the oven is working, rinse the quinoa under cold water for 30 seconds. Combine with the water in a saucepan, bring to a boil, then cover and simmer on low for 15 minutes. Remove from heat, keep covered for 5 minutes, then fluff with a fork.

6. Finely chop the parsley and mince the remaining 2 garlic cloves. Zest the remaining lemon and squeeze in its juice. Stir together with the Greek yogurt, Dijon mustard and honey, and season with a pinch of salt if needed.

7. Let the quinoa, chicken and vegetables cool for 20 minutes. Divide among 6 airtight containers and pack the sauce in 6 small separate containers. Refrigerate for up to 4 days; reheat the containers until hot and add the sauce after reheating.
